This is a fantastic meal if you are trying to impress without too much effort! Everything is prepped while the duck is in the oven so its great recipe if you have guests over. At just under £5 a serving it wont break the bank either!
1 Duck leg
150g Sweet potatoes
1 Garlic clove
1/2 tbsp Honey
1/2 tbsp Cointreau
1/2 tbsp Orange juice
A handful of fresh coriander (chopped)
A knob of butter
Start by preheating the oven to 180 and score the skin on the duck leg. Check the instructions on the packaging but you can expect it to take between 60 and 90 minutes to cook. When the oven is up to temperature put in the duck leg and leave for 45 minutes.
While the duck is cooking, peel the sweet potato and cut into cubes. Boil the potato for about 10 minutes. After 45 minutes when the duck is ready to check add the potatoes to the baking tray and mix into the duck fat. This can now be left in the oven until the duck has finished cooking.
Now you can make the syrup, in a small saucepan mix the honey, marmalade, Cointreau and orange juice. Heat slowly until it becomes a syrup, being careful not to let it over cook.
You can now take out the duck and leave it to rest while you prepare the spinach. Simply crush the garlic and add to a frying pan with a knob of butter. Over a low heat, add the spinach and stir until it wilts.
Then add the sweet potatoes to the spinach and stir together. Now you can plate up, drizzling the syrup over the duck.
