400g King Prawns
1 Tsp Dried Chilli Flakes
1 Glass White Wine
2 Tbsp Sundried Tomato Puree
1 Lemon (Juice and Zest)
2 Garlic Cloves (finely chopped)
Start by cooking your spaghetti, in a large pan of boiling salted water for 8-10 minutes. Heat a good amount of olive oil in a frying pan and add the chilli and garlic. Colour for a couple of minutes then add the prawns. Fry these for a minute until they start to turn pink.
Pour in the wine and add the tomato puree. Simmer until the prawns are cooked through. When the pasta is ready strain and add to the frying pan. Pour over the lemon juice and half of the rocket. Taste and add seasoning.
Plate up and finish the dish with the rest of the rocket and lemon zest. I’d definitely recommend when you have friends over, it takes about 10 minutes all together, so you have more time to catch up!
