Peanut Energy Balls

These energy balls are my favourite mid-morning pick me up! During the week I have breakfast before 8  and wait until 1 for lunch, so I’m usually dieing for a snack around 11. These are great at stopping me from dipping into the office biscuit tin! When I make them I separate the balls into bags of 5, the leave them in the freezer and take one bag to work on a Monday.


400g       Medjool Dates (remove stones)

100g       Oats

100g       Dry Roasted Peanuts

2tbsp     Unsweetened Peanut Butter

2tbsp     Coconut Oil


All you really need for these is a good food processor to blend the ingredients all together. Add the oats and nuts to the food processor and blitz until they create a fine powder.

Place in the dates, coconut oil and peanut butter before blending everything together again. Sometimes I have to kneed the mixture together help bind it.

I then split it up into 30 even portions and roll into balls. That’s 5 weeks of work snacks for 16p per snack. Far healthier than going to a vending machine!
